Unless it requires really advanced skills that can only be learned from years of learning, I have found that taking on projects that are slightly beyond me actually helps me learn so much faster. In my freelance work, I have to say, I don't think I've ever been fully qualified but because I wanted to produce quality work for my paying clients I have been able to learn what I needed to learn.
